Enjoy this modern adaptation of a Beef Collops recipe.
Ingredients
- 2 lbs. beef (London Broil or sirloin) sliced about 1/4" thick
- Nutmeg
- ½ medium onion, shredded
- 1 tsp. lemon peel, grated fine
- Sweet herbs (parsley, marjoram, thyme, and tarragon), tied together for easy removal
- Salt and pepper to taste
- 1 Tbs. butter, formed into a ball
- Flour
Directions
- Cut the beef into strips about 2" x 1/2" and use the spine of a knife and beat the beef strips.
- Season lightly with nutmeg and dust with flour.
- Place in a spider skillet, add water till almost covered.
- Roll the butter in flour, and add with the rest of the ingredients to the pan.
- Over a quickfire, bring to a simmer, shaking often. Reduce heat and hold at a simmer for about ten minutes.
