Ingredients
- 4 ripe tomatoes, sliced 3/8 inch thick
- 1/2 cup flour
- 2 tablespoon butter
- 1 tablespoon olive oil
- 1/4 cup heavy cream
- Salt and Pepper
Directions
Dredge tomatoes in the flour, which has a touch of salt in it. Melt butter and oil in a saute pan and add tomatoes and fry over high heat for 5 minutes or until brown. Turn and brown on the other side. Remove to a warm platter. Pour cream into the hot pan and scrape all the bits and pieces and pour over the tomatoes. Season to taste.
