Ingredients

  • 2 (1/2-inch thick) pork chops
  • Salt
  • Pepper
  • 1 large tart apple
  • 1/2 teaspoon celery salt
  • Vegetable oil
  • 1/3 cup wine or dry vermouth
  • 1/3 cup whipping cream

Directions

Trim chops of fat. Sprinkle on both sides with salt and black pepper; pound lightly. Spread thinly sliced, quartered apple over bottom of shallow au gratin dish or casserole, 1 to 1 1/2 inches deep. Sprinkle with the celery salt. Brown chops on both sides in very hot vegetable oil. Do not cook chops. Put chops on top of apple; pour in wine. Cover lightly with foil and bake at 350 degrees for 45 minutes. Remove foil, pour the heavy cream over the chops and bake 15 or 20 minutes more.
